Instant Grub: Double the Yum Vegan Burger

Double Patty, No Oil, No Added Sugar , Healthy & Low Effort Vegan Burger

When I think of a having a vegan burger, I think of a hearty and nutritious meal that tastes good and isn't much of a hassle during preparation. Which is why, I came up with this recipe which features an interesting blend of ingredients with 2 delicious distinct patties to bring the flavours of this burger to another level. I used absolutely no oil during the preparation as my non-stick skillet came in handy to prepare every component of this healthy burger. The freedom to alter this burger to your palette is given as you chose whatever sauce or dressing you fancy to kick it up a notch. I tried my hand at taking pictures during the process so you can enjoy the visual display or scroll down to the actual recipe and get started!

Preparing the Different Components
Tofu Patties:

8 pieces of sliced 1/4 inch tofu

2 cloves of grated garlic

All the ingredients mixed up to form the marinade

Tofu slices coated and ready to be cling-wrapped and marinated in the refrigerator for 3-4 hours

Marinated tofu slices ready to be cooked in a non-stick skillet over medium heat

Tofu patties cooked till golden-brown on both sides.


Bean Patties:


1 Can of drained red kidney beans (no additives or food conditioners)

All the ingredients mixed up and separated into 8 individual patties 

Bean patties cooked in a non-stick skillet over medium heat until golden-brown on both sides.


Caramalised Onions: 

4 medium-sided onions finely sliced using a mandoline slicer

Onions caramalised over medium-heat with 1 tbsp of water to prevent burning.


Assembly of Burger


Lettuce is rinsed and dried

Parsley is rinsed and dried, some is chopped

Buns sliced into halves and inner sides toasted in skillet 

Spread sauce/dressing of choice on lower bun (used chunky pasta sauce)

Add on additional toppings like olives  

Place tofu patty over olives

Place bean patty over tofu patty

Add caramalised onions
Followed by lettuce, tomato slices, chopped parsley, dressing/sauce and lastly the top bun.


 The burger is complete!

Preparation time (without waiting time for marination): 30-40 min 
Total preparation time (with waiting time for marination): approx. 5h

*Warning:This recipe isn't as tedious as the list makes it appear to be. In fact, it's pretty simple.*

Ingredients

Tofu Patty+Marinade: 
400g Extra Firm Tofu sliced into 8, 1/4 inch thick squares with small incisions
2 cloves of garlic grated/minced
2 tbsp of light/low sodium soy sauce
1.5 tbsp yellow mustard
1 tbsp water
1/4 tsp grated fresh ginger
1/4 tsp freshly ground pepper or to taste
1/8 tsp smoked paprika or to taste
Pinch of turmeric powder (optional)

Bean Patty:
1 can 450g Red Kidney Beans/freshly cooked Red Kidney Beans 
1/2 cup defrosted/fresh corn
1 tbsp tomato puree
1/8 tsp black pepper or to taste
1/8 tsp salt or to taste
Smoked paprika to taste

Caramalised Onions:
4 medium onions finely sliced or use a mandoline
2 tbsp water/balsamic vinegar 

Others:
8 wholemeal burger buns
1 head Iceberg lettuce/Butterhead lettuce
Tomato slices
Sliced Olives
Sauce/Dressing of you choice (eg. tomato ketchup, salsa, barbecue sauce, Dijon mustard etc)
Parsley chopped and whole (optional)
Any other fillings of choice (eg. jalapenos, pickles etc) 


Directions
(The same skillet can be used throughout)

Tofu Patty:
1) Marinade tofu 3-4 hours before preparing burgers by mixing all listed ingredients and coating on sliced tofu.
2) Cover tofu with cling wrap and place in the refrigerator until ready to use.
3) When ready to prepare burger, heat a non-stick skillet over medium heat and allow to evenly heat.
4) Place marinated tofu patties on heated skillet for 7 minutes or until golden brown before flipping over.
5) Keep aside to use during assembly.

Bean Patty:
1) Roughly mash red kidney beans with a fork and mix in the listed ingredients.
2) Divide mixture into 8 portions to form 8 patties.
3) Heat a non-stick skillet over medium heat and allow it to evenly heat up.
4) Spoon in 1 portion at a time and flatten to form the shape of a patty.
5) Cook on each side for 2-4 minutes or until golden brown.

Caramalised Onions;
1) Heat skillet over medium heat and add thinly sliced onions.
2) Once onions start to brown, add the water/balsamic vinegar.
3) Ensure onions do not but and cook until brown. 

Assembly:
1) Slice the burger buns into half and toast the inner sides on skillet until light brown.
2) Using choice of dressing/sauce, place desired amount on the lower bun.
3) Proceed to stack on fillings in any order or as follows; sliced olives, tofu patty, bean patty, caramalised onions, sliced tomato, lettuce, chopped parsley, sauce/dressing, top bun and top it off with a sprig of parsley if desired
4) Serve and enjoy!
